Saffron Rice

Today I made Saffron Rice, which is as easy as making regular rice.  In this recipe I use brown rice; you can substitute this with white basmati rice for a more flavorful dish. This simple and savory rice can be served with your favorite shrimp, fish or chicken dish.

Saffron Rice
Ingredients
Servings: 4


½ tsp. saffron threads
¼ cup water
2 tbsp. olive oil
1 small onion (chopped)
1 cup brown rice
1½ cup fish stock
Pinch of salt
1 tbsp. whole cardamom
1 tbsp. whole cloves
Some cilantro
½ cup of mix nuts (toasted)


Directions
1. Steep saffron in hot water
2. In medium skillet, fry onions with oil until soft
3. Add rice and cook for 2 minutes
4. Add fish stock, salt, saffron, cardamom cloves and cilantro.
5. Cover the skillet with a tight- fitting lid and cook for about 20 -25 minutes
6. Fluff rice, add toasted nuts and served.

   
Note: You know the rice is done when:
  •    all the liquid is absorbed
  •    the rice is tender
